Air-Fryer Roasted Salmon with Sautéed Balsamic Spinach

Ingredients
3 tsp. olive oil
4 salmon fillets (6 oz. each)
1 to 1 ½ tsps. reduced-sodium seafood seasoning
¼ tsp. pepper
1 garlic clove, sliced
Dash of crushed red pepper flakes
10 cups fresh baby spinach (about 10 oz.)
6 small tomatoes, seeded and cut into ½-in. pieces
½ cup balsamic vinegar
Instructions
- Heat air fryer to 450°.
- Rub 1 tsp. olive oil over both sides of the salmon and then sprinkle with seafood seasoning and pepper.
- Cook the salmon until it begins to flake easily with a fork, about 10 to 12 minutes.
- While the fish is cooking, place remaining oil, garlic, and pepper flakes into a 6-quart stockpot. Heat over low-medium heat or until garlic is softened (about 3 to 4 minutes).
- Increase heat to high and add spinach. Cook and stir until wilted (about 3 to 4 minutes).
- Add tomatoes and stir until heated thoroughly.
- Divide the mixture evenly onto four separate plates.
- In a small saucepan, bring vinegar to a boil and cook until it is reduced by half (about 2 to 3 minutes). Immediately remove from heat.
- Place cooked salmon over spinach mixture and then drizzle with the balsamic glaze.
